Ingredients:

  • 2 cups (250g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 1 cup (225g) unsalted butter, cold and cubed
  • ½ tsp (3g) salt
  • 4 cups (600g) peeled and diced fresh peaches
  • 3 tbsp (25g) cornstarch
  • 2 tbsp (30ml) lemon juice
  • ¼ cup (50g) sugar

Instructions:

  1. Line an 8-inch square pan with parchment paper, leaving an overhang on the sides.
  2. Combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Press 2/3 of the dough firmly into the bottom of the pan. Bake at 350°F (175°C) for 10-12 minutes until the edges are just beginning to turn a pale gold.
  4. Toss diced fresh peaches with cornstarch, lemon juice, and sugar until evenly coated.
  5. Spread the peach mixture evenly over the warm, pre-baked crust, ensuring it reaches the edges.
  6. Pinch the remaining 1/3 of the dough into small clumps and drop them evenly over the peach layer.
  7. Bake for 18-22 minutes until the topping is golden brown and the fruit filling is bubbling.
  8. Allow the bars to cool completely for 2 hours to set before slicing into squares.
