Ingredients:
- 2 cups (250g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 1 cup (225g) unsalted butter, cold and cubed
- ½ tsp (3g) salt
- 4 cups (600g) peeled and diced fresh peaches
- 3 tbsp (25g) cornstarch
- 2 tbsp (30ml) lemon juice
- ¼ cup (50g) sugar
Instructions:
- Line an 8-inch square pan with parchment paper, leaving an overhang on the sides.
- Combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Press 2/3 of the dough firmly into the bottom of the pan. Bake at 350°F (175°C) for 10-12 minutes until the edges are just beginning to turn a pale gold.
- Toss diced fresh peaches with cornstarch, lemon juice, and sugar until evenly coated.
- Spread the peach mixture evenly over the warm, pre-baked crust, ensuring it reaches the edges.
- Pinch the remaining 1/3 of the dough into small clumps and drop them evenly over the peach layer.
- Bake for 18-22 minutes until the topping is golden brown and the fruit filling is bubbling.
- Allow the bars to cool completely for 2 hours to set before slicing into squares.
