Ingredients:

  • 1 pound (450g) ground beef
  • 1 medium yellow onion, chopped
  • 1 packet (approximately 1 ounce or 28g) taco seasoning mix
  • 1 can (15 ounces/425g) black beans, rinsed and drained
  • 1 can (15 ounces/425g) kidney beans, rinsed and drained
  • 1 can (14.5 ounces/410g) diced tomatoes, undrained
  • 1 can (10 ounces/283g) diced tomatoes and green chilies (like Rotel), undrained (optional)
  • 1 can (15 ounces/425g) whole kernel corn, drained
  • 4 cups (950ml) beef broth (low sodium preferable)
  • Optional Toppings: shredded cheddar cheese, sour cream or Greek yogurt, chopped green onions, avocado slices, tortilla chips

Instructions:

  1. In a large pot, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion to the pot with the ground beef and cook until softened, about 5 minutes.
  3. Stir in the taco seasoning. Cook for 1 minute, stirring constantly. Then, add the black beans, kidney beans, diced tomatoes, diced tomatoes and green chilies (if using), corn, and beef broth.
  4. Bring the soup to a simmer, then reduce heat and cover. Simmer for at least 15 minutes, or longer for flavors to meld.
  5. Ladle into bowls and top with your favourite toppings.
