Ingredients:

  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 2 cups (480ml) milk
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 teaspoon (1.25ml) salt
  • 2 cups (220g) pecan halves or pieces
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 2 teaspoons (10ml) baking powder
  • 1/2 teaspoon (2.5ml) salt
  • 1 cup (240ml) milk
  • 2 tablespoons (30g) unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine melted butter, sugar, milk, vanilla extract, and salt for the pecan filling.
  3. Stir in the pecan halves or pieces.
  4. Pour the pecan filling mixture into the prepared baking dish.
  5. In a separate bowl, whisk together flour, sugar, baking powder, and salt for the cobbler topping.
  6. Add milk and melted butter to the dry ingredients and stir until just combined. Be careful not to overmix.
  7. Gently pour the batter over the pecan filling in the baking dish. Do not stir.
  8. Bake for 40-45 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.
  9. Let the cobbler cool slightly before serving the Easy Pecan Cobbler.
