Ingredients:
- 1 lb broccolini, ends trimmed
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 0.25 teaspoon red pepper flakes
- 0.5 large lemon, juiced
- 0.25 cup freshly grated Parmesan cheese
- 1 teaspoon lemon zest
Instructions:
- Preheat your oven to 400°F (200°C). Wash the broccolini and pat completely dry with a towel to ensure proper roasting.
- Trim about 1/2 inch off the bottom of the stems. Slice particularly thick stems in half lengthwise to ensure even cooking.
- Place the broccolini on a large rimmed baking sheet. Drizzle with olive oil and add minced garlic, salt, pepper, and red pepper flakes. Toss by hand until florets are evenly coated.
- Arrange the stalks in a single layer with space between them to allow for airflow and crisping.
- Roast for 12–15 minutes, checking at the 10-minute mark for tender-crisp texture and caramelized florets.
- Remove from oven and immediately drizzle with fresh lemon juice and sprinkle with grated Parmesan cheese and lemon zest.
