Ingredients:
- 2 lbs (900g) chicken wings, trimmed
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup (120ml) hot sauce (e.g., Frank’s RedHot)
- ¼ cup (60g) unsalted butter
- 1 tablespoon white vinegar
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper (adjust to taste)
- ½ teaspoon smoked paprika
Instructions:
- Pat the chicken wings dry with paper towels. In a large bowl, combine baking powder, salt, and pepper. Add wings and toss to coat evenly; chill in the refrigerator for 30 minutes.
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with foil; place a rack on top if using. Arrange the wings in a single layer and bake for 25-30 minutes, turning halfway, until golden and crispy.
- In a saucepan, melt the butter over medium heat. Whisk in hot sauce, vinegar, garlic powder, cayenne, and smoked paprika until smooth; simmer for 2-3 minutes.
- Once wings are done, remove from the oven and transfer to a large bowl. Pour the sauce over the wings and toss to coat thoroughly.
- Serve immediately with your favourite dipping sauces and sides!
