Ingredients:

  • 12 cups Water
  • 1 (12 fl oz) bottle of lager (optional)
  • 1/2 cup Cajun seasoning, plus more to taste
  • 2 tablespoons Old Bay seasoning
  • 1 tablespoon cayenne pepper
  • 2 large onions, quartered
  • 4 stalks celery, cut into 2-inch pieces
  • 6 cloves garlic, minced
  • 4 lemons, halved
  • 1/4 cup apple cider vinegar
  • 3 pounds small red potatoes
  • 1 pound andouille sausage, sliced
  • 6 ears of corn, shucked and halved
  • 3 pounds large shrimp, peeled and deveined
  • 2 pounds crawfish (optional)
  • 1 pound crab legs (optional)
  • Fresh parsley, chopped (optional)
  • Lemon wedges (optional)

Instructions:

  1. Combine water, beer (if using), Cajun seasoning, Old Bay, cayenne pepper, onions, celery, garlic, lemons, and vinegar in a large pot. Bring to a boil over high heat.
  2. Add potatoes to the boiling broth and cook until almost tender, about 10-15 minutes.
  3. Add the sausage and corn to the pot. Continue to cook for another 5-7 minutes.
  4. Add the shrimp, crawfish (if using), and crab legs (if using). Cook until the shrimp are pink and opaque, and the crawfish are bright red, about 3-5 minutes. Be careful not to overcook the seafood!
  5. Carefully drain the seafood boil using tongs or a spider strainer. Spread the contents onto a large platter or newspaper-lined table.
  6. Garnish with fresh parsley and lemon wedges (optional). Serve immediately and let everyone dig in!
