Ingredients:
- 12 cups Water
- 1 (12 fl oz) bottle of lager (optional)
- 1/2 cup Cajun seasoning, plus more to taste
- 2 tablespoons Old Bay seasoning
- 1 tablespoon cayenne pepper
- 2 large onions, quartered
- 4 stalks celery, cut into 2-inch pieces
- 6 cloves garlic, minced
- 4 lemons, halved
- 1/4 cup apple cider vinegar
- 3 pounds small red potatoes
- 1 pound andouille sausage, sliced
- 6 ears of corn, shucked and halved
- 3 pounds large shrimp, peeled and deveined
- 2 pounds crawfish (optional)
- 1 pound crab legs (optional)
- Fresh parsley, chopped (optional)
- Lemon wedges (optional)
Instructions:
- Combine water, beer (if using), Cajun seasoning, Old Bay, cayenne pepper, onions, celery, garlic, lemons, and vinegar in a large pot. Bring to a boil over high heat.
- Add potatoes to the boiling broth and cook until almost tender, about 10-15 minutes.
- Add the sausage and corn to the pot. Continue to cook for another 5-7 minutes.
- Add the shrimp, crawfish (if using), and crab legs (if using). Cook until the shrimp are pink and opaque, and the crawfish are bright red, about 3-5 minutes. Be careful not to overcook the seafood!
- Carefully drain the seafood boil using tongs or a spider strainer. Spread the contents onto a large platter or newspaper-lined table.
- Garnish with fresh parsley and lemon wedges (optional). Serve immediately and let everyone dig in!
