Ingredients:

  • 2 large eggs
  • 1/4 cup (60 ml) dairy-free milk alternative (Almond, Oat, Soy, or Coconut)
  • 1 tablespoon (15 ml) pure maple syrup, plus more for serving
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 4 slices bread (Challah, Brioche, or Texas Toast)
  • 2 tablespoons (30g) unsalted butter, for cooking

Instructions:

  1. In a shallow dish, whisk together the eggs, dairy-free milk alternative, maple syrup, cinnamon, vanilla extract, and salt until well combined.
  2. Dip each slice of bread into the custard mixture, ensuring both sides are thoroughly coated. Allow the bread to soak for a few seconds on each side, but don't let it become soggy.
  3. Melt butter in a non-stick skillet or griddle over medium heat.
  4. Place the soaked bread slices in the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve immediately with your favorite toppings, such as maple syrup, fresh berries, or a dusting of powdered sugar.
