Ingredients:
- 2 large eggs
- 1/4 cup (60 ml) dairy-free milk alternative (Almond, Oat, Soy, or Coconut)
- 1 tablespoon (15 ml) pure maple syrup, plus more for serving
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- Pinch of salt
- 4 slices bread (Challah, Brioche, or Texas Toast)
- 2 tablespoons (30g) unsalted butter, for cooking
Instructions:
- In a shallow dish, whisk together the eggs, dairy-free milk alternative, maple syrup, cinnamon, vanilla extract, and salt until well combined.
- Dip each slice of bread into the custard mixture, ensuring both sides are thoroughly coated. Allow the bread to soak for a few seconds on each side, but don't let it become soggy.
- Melt butter in a non-stick skillet or griddle over medium heat.
- Place the soaked bread slices in the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve immediately with your favorite toppings, such as maple syrup, fresh berries, or a dusting of powdered sugar.
