Ingredients:

  • 3 lbs fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup whole milk
  • 6 tbsp unsalted butter, melted

Instructions:

  1. Score an X on the bottom of each peach, drop in boiling water for 30 seconds, then plunge into ice water to remove skins. Toss the sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, lemon juice, and 1/4 tsp salt. Let sit for 5 minutes.
  2. In a medium bowl, whisk together the flour, 1 cup sugar, baking powder, and 1/4 tsp salt. Stir in the milk until just combined, then fold in the melted butter until the batter is smooth.
  3. Preheat oven to 375°F (190°C). Pour the prepared peaches into a 9x9 inch baking dish or cast-iron skillet.
  4. Spoon the batter evenly over the top of the peaches. Bake for 35–40 minutes until the topping is deep mahogany brown and the juices are bubbling around the edges.
