Ingredients:
- 3 lbs fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- 1 tbsp fresh lemon juice
- 1/4 tsp salt
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup whole milk
- 6 tbsp unsalted butter, melted
Instructions:
- Score an X on the bottom of each peach, drop in boiling water for 30 seconds, then plunge into ice water to remove skins. Toss the sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, lemon juice, and 1/4 tsp salt. Let sit for 5 minutes.
- In a medium bowl, whisk together the flour, 1 cup sugar, baking powder, and 1/4 tsp salt. Stir in the milk until just combined, then fold in the melted butter until the batter is smooth.
- Preheat oven to 375°F (190°C). Pour the prepared peaches into a 9x9 inch baking dish or cast-iron skillet.
- Spoon the batter evenly over the top of the peaches. Bake for 35–40 minutes until the topping is deep mahogany brown and the juices are bubbling around the edges.
