Ingredients:

  • 4 cups salad greens (mixed baby greens or arugula) (160g)
  • 1 cup cherry tomatoes, halved (150g)
  • 1 cup cucumber, diced (150g)
  • 1/2 cup black olives, pitted and halved (75g)
  • 1/2 cup pepperoni slices (75g) or salami (75g)
  • 1/2 cup mozzarella balls (125g) or feta cheese, crumbled (90g)
  • 1/4 cup olive oil (60ml)
  • 2 tablespoons red wine vinegar (30ml)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Wash and dry salad greens thoroughly, then place in a large mixing bowl.
  2. Add halved cherry tomatoes and diced cucumber.
  3. Toss in black olives, pepperoni (or salami), and mozzarella (or feta).
  4. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper until emulsified.
  5. Drizzle the dressing over the salad mix, then gently toss with salad tongs.
  6. For easy serving, transfer to resealable bags or mason jars.
  7. Taste and adjust seasoning, adding more salt, pepper, or vinegar as preferred.
