Ingredients:
- 4 cups salad greens (mixed baby greens or arugula) (160g)
- 1 cup cherry tomatoes, halved (150g)
- 1 cup cucumber, diced (150g)
- 1/2 cup black olives, pitted and halved (75g)
- 1/2 cup pepperoni slices (75g) or salami (75g)
- 1/2 cup mozzarella balls (125g) or feta cheese, crumbled (90g)
- 1/4 cup olive oil (60ml)
- 2 tablespoons red wine vinegar (30ml)
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Wash and dry salad greens thoroughly, then place in a large mixing bowl.
- Add halved cherry tomatoes and diced cucumber.
- Toss in black olives, pepperoni (or salami), and mozzarella (or feta).
- In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper until emulsified.
- Drizzle the dressing over the salad mix, then gently toss with salad tongs.
- For easy serving, transfer to resealable bags or mason jars.
- Taste and adjust seasoning, adding more salt, pepper, or vinegar as preferred.
