Ingredients:

  • 8 oz (227 g) cream cheese, softened
  • ½ cup (100 g) granulated sugar
  • 1 tsp (5 ml) vanilla extract
  • 1 large egg, beaten
  • 4 large flour tortillas
  • ½ cup (120 ml) vegetable oil (for frying)
  • 1 cup (100 g) crushed graham crackers
  • ½ tsp (2 g) ground cinnamon
  • 1 tbsp (12 g) powdered sugar (optional for dusting)

Instructions:

  1. In a mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract.
  2. Whisk until smooth and creamy.
  3. Fold in the beaten egg and mix until fully incorporated.
  4. Lay a flour tortilla flat on a clean surface.
  5. Spoon ¼ of the cheesecake filling onto the center of the tortilla.
  6. Fold in the sides and roll tightly to form a burrito. Repeat for remaining tortillas.
  7. Place the assembled burritos in the refrigerator for 15 minutes to firm up the filling.
  8. In a shallow dish, combine crushed graham crackers and ground cinnamon.
  9. Heat vegetable oil in a frying pan over medium heat.
  10. Once the oil is hot, carefully place each burrito seam-side down in the pan.

  12. Remove and let drain on paper towels.
  13. Roll the fried burritos in the graham cracker mixture, ensuring they are evenly coated.
  14. Dust with powdered sugar if desired and serve warm.
