Ingredients:

  • 1½ pounds bone-in, skin-on chicken pieces (legs, thighs, or breasts)
  • 1 cup buttermilk
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • 2 cups vegetable oil (or enough for deep frying)

Instructions:

  1. Combine buttermilk, hot sauce, garlic powder, onion powder, salt, and pepper in a bowl. Add chicken pieces, ensuring they are well coated, and marinate in the refrigerator for at least 30 minutes.
  2. In a shallow dish, mix together flour, paprika, baking powder, salt, black pepper, and cayenne pepper.
  3. Remove chicken from marinade and let excess drip off. Dredge each piece in the flour mixture, pressing gently to adhere. Set aside on a plate.
  4. In a large frying pan, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
  5. Carefully add chicken pieces to the hot oil, taking care not to overcrowd the pan. Fry for 7-10 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
  6. Remove chicken and place on a cooling rack lined with paper towels to absorb excess oil.
