Ingredients:
- 1½ pounds bone-in, skin-on chicken pieces (legs, thighs, or breasts)
- 1 cup buttermilk
- 1 teaspoon hot sauce (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cayenne pepper
- 2 cups vegetable oil (or enough for deep frying)
Instructions:
- Combine buttermilk, hot sauce, garlic powder, onion powder, salt, and pepper in a bowl. Add chicken pieces, ensuring they are well coated, and marinate in the refrigerator for at least 30 minutes.
- In a shallow dish, mix together flour, paprika, baking powder, salt, black pepper, and cayenne pepper.
- Remove chicken from marinade and let excess drip off. Dredge each piece in the flour mixture, pressing gently to adhere. Set aside on a plate.
- In a large frying pan, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
- Carefully add chicken pieces to the hot oil, taking care not to overcrowd the pan. Fry for 7-10 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
- Remove chicken and place on a cooling rack lined with paper towels to absorb excess oil.
