Ingredients:

  • 3/4 cup (170g) unsalted butter, melted and hot
  • 1 1/2 cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp (10ml) vanilla extract
  • 3/4 cup (65g) unsweetened cocoa powder
  • 3/4 cup (95g) all-purpose flour
  • 1/2 tsp (3g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 325°F (163°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Melt the butter in the microwave or on the stove. While the butter is still hot, whisk in the unsweetened cocoa powder to bloom the chocolate flavor.
  3. Add the granulated sugar to the butter mixture and whisk vigorously. Add the eggs and vanilla extract one at a time, whisking for 1-2 minutes until the batter becomes pale and glossy.
  4. Sift in the all-purpose flour and salt. Using a rubber spatula, gently fold the dry ingredients into the wet until just combined; do not overmix.
  5. Stir in the semi-sweet chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes until the edges are set and slightly pulling away from the sides.
