Ingredients:
- 1 cup (120g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1 cup (200g) granulated sugar
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) finely shredded zucchini, squeezed dry
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- Grate the zucchini using the fine side of the grater and use a clean kitchen towel to press out all excess moisture.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
- Stir in the melted butter, eggs, and vanilla extract until a thick paste forms.
- Fold in the squeezed zucchini and chocolate chips until just combined, taking care not to over-mix.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes until the top is matte and the edges slightly pull away from the sides; a toothpick inserted in the center should have a few moist crumbs attached.
