Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1 cup (200g) granulated sugar
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (225g) finely shredded zucchini, squeezed dry
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Grate the zucchini using the fine side of the grater and use a clean kitchen towel to press out all excess moisture.
  3. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
  4. Stir in the melted butter, eggs, and vanilla extract until a thick paste forms.
  5. Fold in the squeezed zucchini and chocolate chips until just combined, taking care not to over-mix.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25-30 minutes until the top is matte and the edges slightly pull away from the sides; a toothpick inserted in the center should have a few moist crumbs attached.
