Ingredients:
- 16 sheets phyllo dough, thawed
- 115g unsalted butter, melted
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 0.5 tsp smoked sea salt
- 280g Boursin Garlic & Fine Herbs cheese, softened
- 115g goat cheese, room temperature
- 1 tbsp fresh chives, finely snipped
- 0.5 tsp freshly cracked black pepper
Instructions:
- Infuse the fat: Combine 115g melted butter, 2 cloves minced garlic, 1 tsp thyme, and 0.5 tsp smoked sea salt. Let it sit for 10 minutes until the butter smells intensely of garlic and herbs.
- Whip the core: Mix 280g softened Boursin, 115g goat cheese, 1 tbsp chives, and 0.5 tsp black pepper. Whip until the mixture is velvety and holds a soft peak.
- Prepare the canvas: Unroll the phyllo. Cover it with a damp cloth immediately. Layer 4 sheets, brushing each with the garlic butter until the pastry looks slightly translucent.
- Precision cutting: Use a pizza cutter to slice the stack into 7.5cm (3 inch) squares. Note: Square cuts ensure the petals of our blossom are even.
- Form the blossoms: Press each stack into the mini muffin tin. Stagger the corners until they resemble a blooming flower.
- Load the centers: Pipe or spoon 1 tablespoon of cheese into each cup. Note: Don't overfill, or the cheese will bubble over and ruin the crisp edges.
- The first blast: Bake at 190°C (375°F) for 12-15 minutes until the edges are a deep, golden mahogany and shatter crisp.
- The glaze: Remove from the oven and immediately drizzle with 60ml honey until the honey thins out and coats the hot cheese.
- The final polish: Sprinkle with 60g crushed walnuts and 40g pomegranate seeds until the colors look like a festive mosaic.
- Rest and serve: Let them sit in the tin for 5 minutes until the structure sets before moving to a serving platter.
