Ingredients:

  • 1.5 lbs (680g) frozen French fries
  • Vegetable oil, for frying
  • Salt, to taste
  • Black pepper, to taste
  • 4 tablespoons (57g) unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour (24g)
  • 1 ½ cups (355ml) whole milk
  • ½ cup (50g) grated Parmesan cheese, plus extra for topping
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Pinch of red pepper flakes (optional)
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped

Instructions:

  1. Heat oil to 350°F (175°C) or preheat oven according to fries package directions.
  2. Fry or bake fries until golden brown and crispy.
  3. Season with salt and pepper immediately after removing from oil or oven.
  4. Melt butter in a skillet over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  5. Whisk in flour until a smooth paste forms.
  6. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened (3-5 mins).
  7. Stir in Parmesan cheese, garlic powder, onion powder, and red pepper flakes (if using).
  8. Season with salt and pepper to taste.
  9. Arrange cooked fries on a platter.
  10. Drizzle with garlic Parmesan sauce.
  11. Top with crumbled bacon, parsley, and chives. Sprinkle with extra Parmesan cheese, if desired.
  12. Serve immediately.
