Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) vegetable oil
  • 3 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 tsp (7g) baking powder
  • 1/2 tsp (3g) salt
  • 3 large (approx. 1.5 lbs / 680g) Granny Smith or Honeycrisp apples, peeled and sliced
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 6 tbsp (85g) cold unsalted butter, cubed
  • 1/2 tsp (1g) ground cinnamon

Instructions:

  1. In a large bowl, beat the vegetable oil and eggs using an electric mixer on medium-high speed until the mixture is pale and creamy.
  2. Stir in the granulated sugar and vanilla extract, beating for another 2 minutes until well combined and slightly fluffy.
  3. Sift in the flour, baking powder, and salt. Mix on low speed just until the flour streaks disappear.
  4. In a separate bowl, toss sliced apples with lemon juice and cinnamon until evenly coated.
  5. Grease and flour a 9x13 pan. Pour the batter in and smooth the top with a spatula. Arrange the apple slices on top in overlapping rows or a concentric circle pattern.
  6. In a small bowl, combine the flour, sugar, and cinnamon. Use your fingertips or a pastry cutter to rub the cold butter into the flour until the mixture resembles coarse, pebbly crumbs.
  7. Sprinkle the streusel evenly across the apple layer, ensuring the edges are well-covered.
  8. Bake at 350°F (175°C) for 40–45 minutes until the top is a deep mahogany-gold and a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 15 minutes before slicing.
