Ingredients:
- 6 firm-ripe Bosc or Anjou pears, peeled, cored, and sliced
- 1 tbsp fresh ginger, finely grated
- 1 tsp ground ginger
- 2 tbsp cornstarch
- 1/4 cup pure maple syrup
- 1 tbsp fresh lemon juice
- 1/4 tsp ground cinnamon
- 1 cup old-fashioned rolled oats
- 1/2 cup almond flour
- 1/4 cup coconut sugar
- 1/3 cup melted coconut oil
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced pears with lemon juice to prevent browning.
- Stir in the maple syrup, fresh grated ginger, ground ginger, cinnamon, and cornstarch until every slice is evenly coated.
- Transfer the pear mixture into a 9x9 inch baking dish, spreading it into an even layer.
- In a separate bowl, combine the rolled oats, almond flour, coconut sugar, cinnamon, and salt.
- Pour in the melted coconut oil and use a fork or fingertips to rub the fat into the dry ingredients until the mixture resembles coarse, moist crumbs.
- Sprinkle the streusel evenly over the pear filling, pressing down very lightly.
- Bake for 40–45 minutes until the filling is bubbling around the edges and the topping is a deep mahogany-gold color.
