Ingredients:

  • 6 firm-ripe Bosc or Anjou pears, peeled, cored, and sliced
  • 1 tbsp fresh ginger, finely grated
  • 1 tsp ground ginger
  • 2 tbsp cornstarch
  • 1/4 cup pure maple syrup
  • 1 tbsp fresh lemon juice
  • 1/4 tsp ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 1/3 cup melted coconut oil
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced pears with lemon juice to prevent browning.
  3. Stir in the maple syrup, fresh grated ginger, ground ginger, cinnamon, and cornstarch until every slice is evenly coated.
  4. Transfer the pear mixture into a 9x9 inch baking dish, spreading it into an even layer.
  5. In a separate bowl, combine the rolled oats, almond flour, coconut sugar, cinnamon, and salt.
  6. Pour in the melted coconut oil and use a fork or fingertips to rub the fat into the dry ingredients until the mixture resembles coarse, moist crumbs.
  7. Sprinkle the streusel evenly over the pear filling, pressing down very lightly.
  8. Bake for 40–45 minutes until the filling is bubbling around the edges and the topping is a deep mahogany-gold color.
