Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1 large egg (50g)
  • 1/4 cup (60ml) unsulphured molasses
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp (5g) ground ginger
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (1g) ground cloves
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 2 tbsp (25g) granulated white sugar

Instructions:

  1. Beat the softened butter and brown sugar until the mixture is pale and fluffy. Incorporate the egg and molasses, beating on medium speed until the batter is a smooth, mahogany-colored emulsion.
  2. Whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Gradually fold the dry ingredients into the wet batter, mixing only until the white streaks of flour disappear.
  3. Cover the dough tightly with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flour to hydrate and the fats to solidify.
  4. Preheat oven to 350°F (175°C). Scoop 1-tablespoon portions and roll them into smooth spheres.
  5. Roll each ball in the granulated sugar until lightly coated and bake until the edges are set.
