Ingredients:
- 3 pounds sweet potatoes, peeled and cut into 1-inch thick rounds
- ½ cup (1 stick) unsalted butter, cut into cubes
- ¾ cup packed light brown sugar
- ½ cup granulated sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- ½ cup water
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Peel sweet potatoes and cut into 1-inch thick rounds.
- In a large saucepan over medium heat, melt butter. Stir in brown sugar, granulated sugar, cinnamon, nutmeg, ginger, and salt.
- Add water to the saucepan. Bring to a simmer, stirring constantly, until the sugars are dissolved and the sauce is smooth.
- Arrange sweet potato slices in a single layer in the prepared baking dish.
- Pour the caramel sauce evenly over the sweet potatoes.
- Bake in the preheated oven for 45 minutes, or until sweet potatoes are tender and easily pierced with a fork. Baste with sauce halfway through baking.
- Remove from oven and stir in vanilla extract. Let cool slightly before serving.
