Ingredients:

  • 3 pounds sweet potatoes, peeled and cut into 1-inch thick rounds
  • ½ cup (1 stick) unsalted butter, cut into cubes
  • ¾ cup packed light brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ cup water
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Peel sweet potatoes and cut into 1-inch thick rounds.
  2. In a large saucepan over medium heat, melt butter. Stir in brown sugar, granulated sugar, cinnamon, nutmeg, ginger, and salt.
  3. Add water to the saucepan. Bring to a simmer, stirring constantly, until the sugars are dissolved and the sauce is smooth.
  4. Arrange sweet potato slices in a single layer in the prepared baking dish.
  5. Pour the caramel sauce evenly over the sweet potatoes.
  6. Bake in the preheated oven for 45 minutes, or until sweet potatoes are tender and easily pierced with a fork. Baste with sauce halfway through baking.
  7. Remove from oven and stir in vanilla extract. Let cool slightly before serving.
