Ingredients:

  • 6 cups peeled and cubed firm pears
  • ½ cup pure maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 cup almond flour
  • ½ cup gluten-free oat flour
  • ½ cup coconut sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 6 tbsp cold unsalted butter, cubed
  • 2 tbsp melted coconut oil

Instructions:

  1. Place cubed pears, maple syrup, lemon juice, cinnamon, and nutmeg in a saucepan over medium heat.
  2. Simmer for 5–7 minutes until the pears just begin to soften.
  3. Whisk the cornstarch with a teaspoon of water to create a slurry, stir it into the pan, and cook for 1 more minute until the sauce is glossy and thick.
  4. Pour the mixture into a 9x9 inch baking dish and spread evenly.
  5. In a large bowl, whisk together the almond flour, oat flour, sugar, baking powder, and salt.
  6. Add the cold, cubed butter and use a pastry cutter or forks to work it into the flour until the mixture looks like coarse crumbs.
  7. Stir in the melted coconut oil until a soft, clumped dough forms.
  8. Drop spoonfuls of the dough over the pear filling, leaving peaks and valleys for crispy edges.
  9. Bake at 375°F (190°C) for 40 minutes until the topping is golden brown.
