Ingredients:
- 6 cups peeled and cubed firm pears
- ½ cup pure maple syrup
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 cup almond flour
- ½ cup gluten-free oat flour
- ½ cup coconut sugar
- 1 tsp baking powder
- ¼ tsp salt
- 6 tbsp cold unsalted butter, cubed
- 2 tbsp melted coconut oil
Instructions:
- Place cubed pears, maple syrup, lemon juice, cinnamon, and nutmeg in a saucepan over medium heat.
- Simmer for 5–7 minutes until the pears just begin to soften.
- Whisk the cornstarch with a teaspoon of water to create a slurry, stir it into the pan, and cook for 1 more minute until the sauce is glossy and thick.
- Pour the mixture into a 9x9 inch baking dish and spread evenly.
- In a large bowl, whisk together the almond flour, oat flour, sugar, baking powder, and salt.
- Add the cold, cubed butter and use a pastry cutter or forks to work it into the flour until the mixture looks like coarse crumbs.
- Stir in the melted coconut oil until a soft, clumped dough forms.
- Drop spoonfuls of the dough over the pear filling, leaving peaks and valleys for crispy edges.
- Bake at 375°F (190°C) for 40 minutes until the topping is golden brown.
