Ingredients:
- 2 cups (210g) superfine almond flour
- ½ cup (60g) coconut flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) sea salt
- 1 tbsp (6g) ground cinnamon
- ½ cup (120ml) pure maple syrup
- ⅓ cup (80ml) melted coconut oil
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 1 ½ cups (225g) finely grated zucchini
- ½ cup (60g) chopped walnuts
- ¼ cup (35g) raisins
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
- In a large mixing bowl, whisk together the almond flour, coconut flour, baking soda, salt, and cinnamon until no clumps remain.
- In a separate bowl, beat the eggs, maple syrup, melted coconut oil, and vanilla until the mixture is pale and emulsified.
- Fold the finely grated zucchini into the wet ingredients, then slowly stir in the dry ingredients until just combined; do not overmix.
- Fold in the chopped walnuts and raisins.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 30–35 minutes until the edges pull away from the sides and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for 15 minutes before transferring to a wire rack.
