Ingredients:
- 1 ½ cups (355 ml) warm water (105-115°F / 40-46°C)
- 2 ¼ teaspoons (7 grams) active dry yeast (1 packet)
- 1 tablespoon (12 grams) granulated sugar
- 1 ½ teaspoons (9 grams) salt
- 4 cups (500 grams) all-purpose flour, plus more for dusting
- ¼ cup (57 grams) unsalted butter, melted
- 8 cups (1.9 liters) water
- ½ cup (113 grams) baking soda
- ½ cup (113 grams) unsalted butter, melted
- ½ cup (100 grams) granulated sugar
- 2 tablespoons (12 grams) ground cinnamon
Instructions:
- Combine warm water, yeast, and sugar in a mixing bowl. Let stand for 5-10 minutes until foamy.
- Add salt, flour, and melted butter to the yeast mixture. Knead the dough until smooth and elastic (about 5-7 minutes in a stand mixer or 8-10 minutes by hand).
- Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 30 minutes, or until doubled in size.
- Divide the dough into 8 equal pieces. Roll each piece into a long rope (about 24 inches / 60 cm). Shape each rope into a pretzel.
- Bring 8 cups of water and ½ cup of baking soda to a boil in a large pot.
- Carefully drop the pretzels into the boiling water, one or two at a time. Boil for 30 seconds per side.
- Remove the pretzels from the water with a slotted spoon and place them on a baking sheet lined with parchment paper.
- Brush each pretzel generously with melted butter.
- Mix sugar and cinnamon in a bowl, sprinkle liberally over buttered pretzels.
- Bake in a preheated oven at 400°F (200°C) for 12-15 minutes, or until golden brown.
- Let the pretzels cool slightly on the baking sheet before serving these delicious cinnamon sugar pretzels.
