Ingredients:
- 6 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced (about 6 cups/750g)
- ½ cup granulated sugar (100g)
- ¼ cup packed light brown sugar (50g)
- ¼ cup all-purpose flour (30g)
- 1 teaspoon ground cinnamon (5g)
- ¼ teaspoon ground nutmeg (1g)
- ¼ teaspoon ground allspice (1g)
- 2 tablespoons unsalted butter, cut into small pieces (30g)
- 1 tablespoon lemon juice (15ml)
Instructions:
- Peel, core, and slice the apples into roughly even pieces.
- In a large saucepan, whisk together the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and allspice.
- Add the sliced apples and lemon juice to the saucepan and stir to coat evenly with the dry ingredients.
- Place the saucepan over medium heat. Cook, stirring occasionally, until the apples begin to soften and release their juices.
- Continue to cook, stirring more frequently, until the sauce thickens and the apples are tender but not mushy. This usually takes around 15-20 minutes. Visual cue: Sauce should coat the back of a spoon.
- Remove from heat and stir in the butter until melted and incorporated.
- Let the filling cool slightly before using it to fill your pie crust.
