Ingredients:

  • 6 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced (about 6 cups/750g)
  • ½ cup granulated sugar (100g)
  • ¼ cup packed light brown sugar (50g)
  • ¼ cup all-purpose flour (30g)
  • 1 teaspoon ground cinnamon (5g)
  • ¼ teaspoon ground nutmeg (1g)
  • ¼ teaspoon ground allspice (1g)
  • 2 tablespoons unsalted butter, cut into small pieces (30g)
  • 1 tablespoon lemon juice (15ml)

Instructions:

  1. Peel, core, and slice the apples into roughly even pieces.
  2. In a large saucepan, whisk together the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and allspice.
  3. Add the sliced apples and lemon juice to the saucepan and stir to coat evenly with the dry ingredients.
  4. Place the saucepan over medium heat. Cook, stirring occasionally, until the apples begin to soften and release their juices.
  5. Continue to cook, stirring more frequently, until the sauce thickens and the apples are tender but not mushy. This usually takes around 15-20 minutes. Visual cue: Sauce should coat the back of a spoon.
  6. Remove from heat and stir in the butter until melted and incorporated.
  7. Let the filling cool slightly before using it to fill your pie crust.
