Ingredients:
- 3 very ripe bananas, mashed (about 1 ½ cups / 340g)
- ½ cup (1 stick / 113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ¼ cup (50g) packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract (5ml)
- ½ cup (120ml) full-fat sour cream
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking soda (5g)
- ½ teaspoon salt (2.5g)
- ½ teaspoon ground cinnamon (2.5g) (Optional)
- ½ cup (50g) chopped walnuts or pecans (Optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas. Mix until just combined.
- Gently fold in the sour cream. Don't overmix.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the chopped nuts, if using.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
