Ingredients:

  • 3 medium cucumbers, peeled, thinly sliced (approximately 750g/1.6lbs)
  • 1/2 medium red onion, thinly sliced (approximately 50g/1.8oz)
  • 1/4 cup chopped fresh dill (approximately 5g/0.2oz)
  • 1 cup sour cream (240ml/8fl oz)
  • 1/4 cup mayonnaise (60ml/2fl oz)
  • 2 tablespoons white vinegar (30ml/1fl oz)
  • 1 tablespoon granulated sugar (12g/0.4oz)
  • 1/2 teaspoon salt (3g/0.1oz)
  • 1/4 teaspoon black pepper (1g/0.03oz)

Instructions:

  1. Slice the cucumbers and red onion thinly.
  2. In a large bowl, combine the sliced cucumbers, red onion, and dill.
  3. In a separate bowl, whisk together the sour cream, mayonnaise, white vinegar, sugar, salt, and pepper.
  4. Pour the dressing over the cucumber mixture and gently toss to coat.
  5. Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Give it another gentle toss before serving.
