Ingredients:
- 2 green oranges, segmented (approx. 250g)
- 1 ripe avocado, diced (approx. 150g)
- 4 cups mixed salad greens (approx. 120g)
- ½ cup red onion, thinly sliced (approx. 50g)
- ¼ cup chopped fresh cilantro (approx. 15g)
- ¼ cup olive oil (60ml)
- 2 tablespoons apple cider vinegar (30ml)
- 1 tablespoon honey or maple syrup (15g)
- Juice of 1 lime (about 30ml)
- Salt and pepper, to taste
Instructions:
- Cut the green oranges into segments, removing any seeds.
- Dice the avocado and thinly slice the red onion.
- In a large mixing bowl, combine the salad greens, green orange segments, avocado, red onion, and cilantro.
- In a separate bowl, whisk together olive oil, apple cider vinegar, honey (or maple syrup), lime juice, salt, and pepper until well combined.
- Drizzle the vinaigrette over the salad just before serving and gently toss to combine. Adjust seasoning as needed.
