Ingredients:

  • ½ cup soy sauce, low-sodium preferred
  • ¼ cup mirin or rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1.5 lbs flank steak, trimmed
  • Salt and pepper, to taste
  • 2 green onions, chopped (for garnish)
  • Toasted sesame seeds, for garnish (optional)

Instructions:

  1. Whisk together soy sauce, mirin, brown sugar, sesame oil, garlic, and ginger in a mixing bowl until sugar is dissolved.
  2. Place flank steak in a zip-top bag or shallow dish, pour marinade over steak, seal bag or cover dish, and refrigerate for 30 minutes.
  3. Preheat your grill to medium-high heat (about 400°F/200°C).
  4. Take steak out of the marinade, letting excess drip off, and season both sides lightly with salt and pepper.
  5. Place flank steak on the grill and cook for 5-6 minutes on each side for medium-rare, or until it reaches desired doneness (135°F/57°C for medium-rare).
  6. Remove steak from grill, let rest for 5 minutes before slicing.
  7. Slice steak against the grain into thin strips, garnish with chopped green onions and sesame seeds. Serve immediately.
