Ingredients:
- 1/2 cup olive oil
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon minced garlic
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g total)
Instructions:
- In a mixing bowl, combine olive oil, honey, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, paprika, cayenne, salt, and pepper. Whisk until well blended.
- Place chicken breasts in a zip-top bag or shallow dish. Pour marinade over the chicken
- Prepare the grill for direct medium-high heat (about 375-400°F / 190-200°C).
- Remove chicken from marinade and discard excess marinade. Place chicken on the grill. Cook for 6-8 minutes per side, or until internal temperature reaches 165°F (75°C) and chicken has nice grill marks.
- Remove chicken from the grill and let rest for 5 minutes. Serve warm, garnished with fresh herbs if desired.
