Ingredients:

  • 6 ears of corn, husks removed
  • 2 ripe avocados, pitted and diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat grill to medium-high heat. Grill corn, turning occasionally, until kernels are slightly charred and tender, about 10-15 minutes.
  2. Let the corn cool slightly, then cut the kernels off the cob.
  3. In a large bowl, combine corn kernels, avocado, red bell pepper, red onion, and cilantro.
  4. In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for later.
