Ingredients:
- 6 ears of corn, husks removed
- 2 ripe avocados, pitted and diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- 1/4 cup olive oil
- 3 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat grill to medium-high heat. Grill corn, turning occasionally, until kernels are slightly charred and tender, about 10-15 minutes.
- Let the corn cool slightly, then cut the kernels off the cob.
- In a large bowl, combine corn kernels, avocado, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for later.
