Ingredients:

  • 4 ears fresh corn, husks and silk removed
  • 4 cups cubed watermelon
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup thinly sliced red onion
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Preheat grill to medium-high heat. Grill corn, turning occasionally, until kernels are lightly charred and tender, about 10-15 minutes. Let cool slightly.
  2. Stand corn upright and carefully slice off the kernels using a sharp knife.
  3. In a small bowl, whisk together olive oil, lime juice, honey (or maple syrup), salt, pepper, and red pepper flakes (if using).
  4. In a large bowl, combine grilled corn kernels, watermelon, feta cheese, mint, and red onion.
  5. Pour vinaigrette over the salad and gently toss to combine.
  6. Serve immediately or chill for later.
