Ingredients:
- 4 ears fresh corn, husks and silk removed
- 4 cups cubed watermelon
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh mint leaves, roughly chopped
- 1/4 cup thinly sliced red onion
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lime juice, freshly squeezed
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat grill to medium-high heat. Grill corn, turning occasionally, until kernels are lightly charred and tender, about 10-15 minutes. Let cool slightly.
- Stand corn upright and carefully slice off the kernels using a sharp knife.
- In a small bowl, whisk together olive oil, lime juice, honey (or maple syrup), salt, pepper, and red pepper flakes (if using).
- In a large bowl, combine grilled corn kernels, watermelon, feta cheese, mint, and red onion.
- Pour vinaigrette over the salad and gently toss to combine.
- Serve immediately or chill for later.
