Ingredients:
- 4 ears fresh corn, shucked
- 2 ripe avocados, pitted and diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, finely diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice, freshly squeezed
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 clove garlic, minced
- 1/4 teaspoon chili powder
- Salt and black pepper to taste
Instructions:
- Preheat grill to medium heat. Grill corn, turning occasionally, until kernels are tender and lightly charred, about 12-15 minutes. Let cool slightly.
- Cut the kernels off the cob.
- In a small bowl, whisk together lime juice, olive oil, honey, garlic, chili powder, salt, and pepper.
- In a large bowl, combine grilled corn kernels, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
- Pour the lime-cilantro dressing over the salad and toss gently to combine.
- Taste and adjust seasonings as needed. Serve immediately or chill for later.
