Ingredients:

  • 1 lb (450g) seedless watermelon, cubed
  • 8 oz (225g) halloumi cheese, sliced into ½-inch (1.25cm) thick pieces
  • 4 cups (approx. 100g) baby spinach or mixed greens
  • ½ cup (approx. 30g) fresh mint leaves, roughly chopped
  • ½ cup (approx. 70g) red onion, thinly sliced (optional)
  • 3 tablespoons (45ml) extra virgin olive oil
  • 2 tablespoons (30ml) fresh lime juice (from about 1-2 limes)
  • 1 tablespoon (15ml) honey or agave syrup
  • 1 tablespoon (15ml) finely chopped fresh mint
  • ½ teaspoon (2.5ml) sea salt
  • ¼ teaspoon (1.25ml) black pepper

Instructions:

  1. Prepare the Vinaigrette: Whisk together olive oil, lime juice, honey/agave, mint, salt, and pepper in a small bowl or jar. Taste and adjust seasonings as needed.
  2. Grill the Halloumi: Preheat your grill or grill pan to medium heat. Lightly brush the halloumi slices with olive oil. Grill for 2-3 minutes per side, or until golden brown and slightly softened.
  3. Assemble the Salad: In a large bowl, combine the baby spinach/mixed greens, watermelon, and red onion (if using).
  4. Add the Halloumi: Arrange the grilled halloumi slices on top of the salad.
  5. Dress and Garnish: Drizzle the mint-lime vinaigrette over the salad. Sprinkle with fresh mint leaves.
  6. Serve Immediately: Enjoy this delightful salad while the halloumi is still warm.
