Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon (2.5g) baking soda
  • 1/4 teaspoon (1.25g) salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sweetener (erythritol or stevia blend)
  • 1/4 cup (60g) brown sweetener (brown erythritol blend)
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (170g) Lily's Sweets Dark Chocolate Baking Chips

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sweetener, and brown sweetener until light and fluffy.
  4. Beat in the egg, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in the Lily's Sweets Dark Chocolate Baking Chips.
  7. Cover the dough and chill in the refrigerator for at least 15 minutes (this helps prevent spreading).
  8. Using a small cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each bite.
  9. Bake for 10-12 minutes, or until the edges are golden brown and the centres are set.
  10. Let the bliss bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
