Ingredients:
- 1 cup (120g) all-purpose flour
- 1/2 teaspoon (2.5g) baking soda
- 1/4 teaspoon (1.25g) salt
- 1/2 cup (113g) unsalted butter, softened
- 1/4 cup (50g) granulated sweetener (erythritol or stevia blend)
- 1/4 cup (60g) brown sweetener (brown erythritol blend)
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1 cup (170g) Lily's Sweets Dark Chocolate Baking Chips
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, granulated sweetener, and brown sweetener until light and fluffy.
- Beat in the egg, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the Lily's Sweets Dark Chocolate Baking Chips.
- Cover the dough and chill in the refrigerator for at least 15 minutes (this helps prevent spreading).
- Using a small cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each bite.
- Bake for 10-12 minutes, or until the edges are golden brown and the centres are set.
- Let the bliss bites cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
