Ingredients:

  • 1 medium Butternut Squash (about 700g), peeled, seeded, and cubed
  • 2 Tbsp Olive Oil
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper, freshly ground
  • 1/2 tsp Smoked Paprika
  • 3 Tbsp Apple Cider Vinegar (ACV)
  • 2 Tbsp Maple Syrup
  • 1 Tbsp Dijon Mustard
  • 1 small Shallot, finely minced
  • 6 Tbsp Extra Virgin Olive Oil (for vinaigrette)
  • 6 oz Mixed Greens (Kale/Spinach mix)
  • 1 large Apple, crisp variety (e.g., Honeycrisp, Gala)
  • 1/2 cup Dried Cranberries
  • 1/2 cup Pecan Halves, lightly toasted
  • 3 oz Goat Cheese, soft chèvre, crumbled

Instructions:

  1. Prepare and Roast the Butternut Squash: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a large bowl, toss the cubed butternut squash with 2 Tbsp olive oil, salt, pepper, and smoked paprika until evenly coated.
  2. Roast the Squash: Spread the seasoned squash in a single layer on the prepared baking sheet. Roast for 25–30 minutes, flipping halfway through, until edges are caramelized and the squash is fork-tender. Remove and allow to cool for at least 10 minutes.
  3. Whisk the Vinaigrette: In a small bowl, combine the ACV, maple syrup, Dijon mustard, minced shallot, salt, and pepper. Whisk vigorously for 30 seconds. Slowly drizzle in the 6 Tbsp of olive oil while continuously whisking until the dressing thickens slightly and is fully emulsified. Taste and adjust seasoning.
  4. Assemble the Salad Base: Place the mixed greens into a large mixing bowl. If using large kale leaves, gently massage them with a teaspoon of olive oil and a pinch of salt to soften them. Quarter and thinly slice the apple, keeping the pieces substantial for crunch. Add the sliced apple, dried cranberries, and toasted pecans to the bowl with the greens.
  5. Dress and Serve: Drizzle about two-thirds of the maple-mustard vinaigrette over the salad base and toss gently to coat. Add the cooled, roasted squash and gently toss once or twice more. Transfer the salad to a serving platter, crumble the goat cheese over the top, and serve immediately.
