Ingredients:

  • 1 cup water
  • 2 tbsp grass-fed butter
  • 1 tbsp monk fruit sweetener
  • 1/4 tsp sea salt
  • 1 cup white whole wheat flour
  • 1 large egg, room temperature
  • 1 large egg white, room temperature
  • 1/2 tsp pure vanilla extract
  • 1/4 cup granulated monk fruit sweetener
  • 1 tbsp ground Ceylon cinnamon
  • 1 tsp avocado oil spray

Instructions:

  1. In a medium saucepan, combine water, grass-fed butter, 1 tablespoon monk fruit sweetener, and sea salt. Bring the mixture to a rolling boil over medium heat.
  2. Add the white whole wheat flour all at once. Stir vigorously with a wooden spoon until the flour is fully incorporated and the dough forms a smooth ball that pulls away from the sides of the pan.
  3. Remove from heat and let the dough cool for 3 minutes.
  4. Transfer the dough to a piping bag fitted with a large star tip.
  5. Beat in 1 large egg, then 1 large egg white and 1/2 tsp vanilla until the dough is silky and glossy.
  6. Pipe 1-inch lengths of dough directly over the air fryer basket, using kitchen shears to snip the dough. Leave space between bites for air circulation.
  7. Cook at 375°F (190°C) for 10 minutes or until the churros are golden and firm to the touch.
  8. Toss the warm bites in 1/4 cup monk fruit and 1 tbsp cinnamon until completely cloaked in spice.
