Ingredients:

  • 120g plain Greek yogurt
  • 80ml unsweetened applesauce
  • 1 large egg
  • 5ml vanilla extract
  • 115g maple syrup
  • 190g whole wheat pastry flour
  • 45g unsweetened cocoa powder
  • 5g baking soda
  • 3g baking powder
  • 1.5g fine sea salt
  • 225g finely shredded zucchini, squeezed dry
  • 85g dark chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using the fine side of a grater and use a clean kitchen towel to gently squeeze out excess water.
  3. In a large bowl, whisk together the Greek yogurt, applesauce, egg, vanilla, and maple syrup until smooth and glossy.
  4. Sift in the cocoa powder, flour, baking soda, baking powder, and salt. Stir with a spatula until just combined.
  5. Gently fold in the squeezed shredded zucchini and dark chocolate chips until evenly distributed.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
