Ingredients:
- 120g plain Greek yogurt
- 80ml unsweetened applesauce
- 1 large egg
- 5ml vanilla extract
- 115g maple syrup
- 190g whole wheat pastry flour
- 45g unsweetened cocoa powder
- 5g baking soda
- 3g baking powder
- 1.5g fine sea salt
- 225g finely shredded zucchini, squeezed dry
- 85g dark chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- Grate the zucchini using the fine side of a grater and use a clean kitchen towel to gently squeeze out excess water.
- In a large bowl, whisk together the Greek yogurt, applesauce, egg, vanilla, and maple syrup until smooth and glossy.
- Sift in the cocoa powder, flour, baking soda, baking powder, and salt. Stir with a spatula until just combined.
- Gently fold in the squeezed shredded zucchini and dark chocolate chips until evenly distributed.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
