Ingredients:
- 2 cups (225g) grated zucchini
- 1/2 cup (120ml) unsweetened applesauce
- 1 large egg (50g)
- 1/3 cup (65ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) whole wheat pastry flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 cup (90g) dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper. Grate your zucchini using the medium hole of a box grater, keeping the moisture in the shreds.
- In a large mixing bowl, whisk together the egg, maple syrup, applesauce, and vanilla until the mixture is smooth. Stir in the grated zucchini.
- Sift the whole wheat pastry flour, baking soda, salt, and cinnamon directly into the wet mixture. Fold gently with a spatula just until no streaks of flour remain; do not overmix.
- Fold in the dark chocolate chips.
- Pour the batter into the prepared pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
