Ingredients:

  • 2 cups (225g) grated zucchini
  • 1/2 cup (120ml) unsweetened applesauce
  • 1 large egg (50g)
  • 1/3 cup (65ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) whole wheat pastry flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 cup (90g) dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper. Grate your zucchini using the medium hole of a box grater, keeping the moisture in the shreds.
  2. In a large mixing bowl, whisk together the egg, maple syrup, applesauce, and vanilla until the mixture is smooth. Stir in the grated zucchini.
  3. Sift the whole wheat pastry flour, baking soda, salt, and cinnamon directly into the wet mixture. Fold gently with a spatula just until no streaks of flour remain; do not overmix.
  4. Fold in the dark chocolate chips.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  6. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
