Ingredients:

  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) canned diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup beef or vegetable broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions:

  1. Dice onion and bell pepper; mince garlic.
  2. In a large pot over medium heat, brown the ground beef or turkey, breaking it into small pieces. Cook until no longer pink (about 5 minutes).
  3. Add diced onion, bell pepper, and minced garlic to the pot, cooking until softened (about 3-4 minutes).
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  5. Add the diced tomatoes, kidney beans, black beans, and broth. Stir well to combine.
  6. Bring to a boil, then reduce heat and let simmer for 15 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary.
  8. Dish up hot and garnish with optional toppings.
