Ingredients:
- 1 lb ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (15 oz) canned diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup beef or vegetable broth
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions:
- Dice onion and bell pepper; mince garlic.
- In a large pot over medium heat, brown the ground beef or turkey, breaking it into small pieces. Cook until no longer pink (about 5 minutes).
- Add diced onion, bell pepper, and minced garlic to the pot, cooking until softened (about 3-4 minutes).
- Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
- Add the diced tomatoes, kidney beans, black beans, and broth. Stir well to combine.
- Bring to a boil, then reduce heat and let simmer for 15 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary.
- Dish up hot and garnish with optional toppings.
