Ingredients:

  • 1 lb ground beef or a plant-based alternative
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cans kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup Guinness stout
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add diced onion and bell pepper, cooking until softened (about 5-7 minutes). Stir in minced garlic and cook for an additional minute until fragrant.
  2. Increase heat to medium-high and add ground beef (or alternative). Cook until browned, breaking it up with a spatula, about 7-10 minutes.
  3. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine.
  4. Pour in the diced tomatoes and kidney beans. Mix thoroughly.
  5. Add Guinness stout, stirring well to incorporate.
  6. Bring to a gentle boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally.
  7. Check seasoning; adjust as necessary before serving.
