Ingredients:
- 1 lb ground beef or a plant-based alternative
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cans kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup Guinness stout
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt & pepper to taste
- 2 tbsp olive oil
Instructions:
- Heat olive oil in a large pot over medium heat. Add diced onion and bell pepper, cooking until softened (about 5-7 minutes). Stir in minced garlic and cook for an additional minute until fragrant.
- Increase heat to medium-high and add ground beef (or alternative). Cook until browned, breaking it up with a spatula, about 7-10 minutes.
- Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine.
- Pour in the diced tomatoes and kidney beans. Mix thoroughly.
- Add Guinness stout, stirring well to incorporate.
- Bring to a gentle boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally.
- Check seasoning; adjust as necessary before serving.
