Ingredients:
- 1 lb ground beef (80% lean)
- 1 cup breadcrumbs
- 1 large egg
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 onion, finely chopped
- 4 cups beef broth
- 3 large onions, thinly sliced
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tsp dried thyme
- 1 bay leaf
- 1/2 cup white wine (optional)
- 2 cups shredded Gruyère or Swiss cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions:
- Preheat the oven to 350°F (175°C). In a medium mixing bowl, combine ground beef, breadcrumbs, egg, milk, salt, pepper, and garlic powder. Shape into a loaf and place in a loaf pan.
- Bake in the preheated oven for 45 minutes or until cooked through (internal temperature of 160°F / 71°C).
- While meatloaf is baking, heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook, stirring frequently, until soft and golden brown (about 30 minutes).
- Add beef broth, thyme, and bay leaf to caramelized onions. If using, add white wine. Bring to a simmer.
- Slice the baked meatloaf into rounds and place in soup bowls. Ladle the French onion broth over the meatloaf.
- Top generously with shredded cheese and broil until melted and bubbly.
- Garnish with chopped parsley and serve immediately.
