Ingredients:

  • 1 lb ground beef (80% lean)
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 onion, finely chopped
  • 4 cups beef broth
  • 3 large onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1/2 cup white wine (optional)
  • 2 cups shredded Gruyère or Swiss cheese
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C). In a medium mixing bowl, combine ground beef, breadcrumbs, egg, milk, salt, pepper, and garlic powder. Shape into a loaf and place in a loaf pan.
  2. Bake in the preheated oven for 45 minutes or until cooked through (internal temperature of 160°F / 71°C).
  3. While meatloaf is baking, heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook, stirring frequently, until soft and golden brown (about 30 minutes).
  4. Add beef broth, thyme, and bay leaf to caramelized onions. If using, add white wine. Bring to a simmer.
  5. Slice the baked meatloaf into rounds and place in soup bowls. Ladle the French onion broth over the meatloaf.
  6. Top generously with shredded cheese and broil until melted and bubbly.
  7. Garnish with chopped parsley and serve immediately.
