Ingredients:
- ½ cup (115g) unsalted butter
- 4 cloves garlic, minced
- ¼ cup (60ml) chicken or vegetable broth
- ¼ cup (60ml) heavy cream
- Salt and pepper to taste
- 1 cup (100g) grated Parmesan cheese (optional)
- Fresh herbs (basil or parsley), chopped (optional)
- 12 oz (340g) spaghetti or your choice of pasta
- Salt for boiling water
Instructions:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente; reserve ½ cup pasta water, then drain.
- In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1-2 minutes). Pour in the broth and cream; stir to combine.
- Add the drained pasta to the skillet; toss to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Stir in Parmesan cheese (if using) and fresh herbs; season to taste. Serve immediately, garnished with more herbs or cheese if desired.
