Ingredients:

  • ½ cup (115g) unsalted butter
  • 4 cloves garlic, minced
  • ¼ cup (60ml) chicken or vegetable broth
  • ¼ cup (60ml) heavy cream
  • Salt and pepper to taste
  • 1 cup (100g) grated Parmesan cheese (optional)
  • Fresh herbs (basil or parsley), chopped (optional)
  • 12 oz (340g) spaghetti or your choice of pasta
  • Salt for boiling water

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente; reserve ½ cup pasta water, then drain.
  2. In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 1-2 minutes). Pour in the broth and cream; stir to combine.
  3. Add the drained pasta to the skillet; toss to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  4. Stir in Parmesan cheese (if using) and fresh herbs; season to taste. Serve immediately, garnished with more herbs or cheese if desired.
