Ingredients:

  • 1 cup (240 ml) water
  • 1/2 cup (113 g) unsalted butter
  • 1 cup (125 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (240 g) powdered sugar
  • 3-4 tablespoons (45-60 ml) whole milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Combine water and butter in a saucepan over medium heat, and stir until melted.
  2. Add flour, salt, and sugar; stir vigorously until a ball forms and pulls away from the sides.
  3. Remove from heat, cool slightly, then beat in eggs one at a time until smooth and glossy.
  4. Stir in vanilla extract.
  5. Transfer the dough to a bowl, cover, and chill for 30 minutes.
  6. Heat oil in a deep frying pan to 350°F (175°C) using a thermometer for accuracy.
  7. Fill a piping bag with the chilled dough and pipe 6-inch rings onto parchment paper.
  8. Carefully drop dough rings into hot oil, frying 2-3 at a time until golden brown, about 3-4 minutes per side.
  9. While crullers cool, whisk together powdered sugar, vanilla, and enough milk for desired glaze thickness.
  10. Dip cooled crullers in glaze, allowing excess to drip off.
  11. Enjoy warm or at room temperature!
