Ingredients:
- 1 cup (240 ml) water
- 1/2 cup (113 g) unsalted butter
- 1 cup (125 g) all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups (240 g) powdered sugar
- 3-4 tablespoons (45-60 ml) whole milk
- 1 teaspoon vanilla extract
Instructions:
- Combine water and butter in a saucepan over medium heat, and stir until melted.
- Add flour, salt, and sugar; stir vigorously until a ball forms and pulls away from the sides.
- Remove from heat, cool slightly, then beat in eggs one at a time until smooth and glossy.
- Stir in vanilla extract.
- Transfer the dough to a bowl, cover, and chill for 30 minutes.
- Heat oil in a deep frying pan to 350°F (175°C) using a thermometer for accuracy.
- Fill a piping bag with the chilled dough and pipe 6-inch rings onto parchment paper.
- Carefully drop dough rings into hot oil, frying 2-3 at a time until golden brown, about 3-4 minutes per side.
- While crullers cool, whisk together powdered sugar, vanilla, and enough milk for desired glaze thickness.
- Dip cooled crullers in glaze, allowing excess to drip off.
- Enjoy warm or at room temperature!
