Ingredients:

  • 4 cups fresh strawberries, hulled
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tbsp honey

Instructions:

  1. Combine the fruit, lemon juice, and honey in a high-speed blender. Process until the mixture is velvety and completely smooth. Sieve if using seedy fruits.
  2. Line a 12x17 inch rimmed baking sheet with a silicone mat or parchment paper. Pour the puree onto the center and use an offset spatula to spread it toward the edges to a 1/8 inch thickness, leaving the edges slightly thicker.
  3. Preheat oven to its lowest setting (150°F–170°F). Bake for 4 to 6 hours until the center is no longer tacky and the leather peels away easily.
