Ingredients:
- 1.5 cups all-purpose flour
- 0.5 cup almond flour
- 0.75 cup granulated sugar
- 1 tsp baking powder
- 0.5 tsp salt
- 3 large eggs
- 0.5 cup extra virgin olive oil
- 0.5 cup whole milk
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 3 medium Bosc or Anjou pears
- 2 tbsp melted butter
Instructions:
- Preheat your oven to 350°F (175°C). Grease the 9-inch pan with melted butter and line the bottom with parchment paper.
- In a large bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt until no lumps remain.
- In the same bowl (or a separate one), beat the eggs and sugar on medium-high until the mixture is pale yellow and thickened.
- Slowly stream in the olive oil while continuing to whisk.
- Stir in the milk, vanilla extract, and lemon zest until the batter is smooth.
- Gently fold in the dry ingredients using a spatula just until combined; do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Arrange the pear slices on top in a concentric circle, pressing them gently into the batter so they are partially submerged.
- Bake for 45–50 minutes until the edges are golden and a toothpick comes out clean.
