Ingredients:
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1 tsp salt
- 1 tbsp granulated sugar
- 8 tbsp ice-cold water
- 3 lbs firm-ripe pears, peeled and sliced
- ½ cup granulated sugar
- ¼ cup all-purpose flour
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground nutmeg
- ¼ tsp salt
Instructions:
- Whisk flour, salt, and sugar in a bowl.
- Add chilled butter cubes. Use a pastry cutter or fork to mash the butter into the flour until the mixture looks like coarse crumbs with some pea-sized chunks remaining.
- Add ice water one tablespoon at a time, stirring with a fork until the dough just holds together. Do not overwork it.
- Divide dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- Peel, core, and slice pears into ¼-inch thick wedges.
- In a large bowl, combine sugar, flour, cinnamon, ginger, nutmeg, and salt.
- Toss the pear slices with the spice mixture and lemon juice until every slice is evenly coated and glistening.
- On a floured surface, roll out the first disc to fit the pie plate. Press it firmly into the bottom and sides.
