Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 8 tbsp ice-cold water
  • 3 lbs firm-ripe pears, peeled and sliced
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Instructions:

  1. Whisk flour, salt, and sugar in a bowl.
  2. Add chilled butter cubes. Use a pastry cutter or fork to mash the butter into the flour until the mixture looks like coarse crumbs with some pea-sized chunks remaining.
  3. Add ice water one tablespoon at a time, stirring with a fork until the dough just holds together. Do not overwork it.
  4. Divide dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
  5. Peel, core, and slice pears into ¼-inch thick wedges.
  6. In a large bowl, combine sugar, flour, cinnamon, ginger, nutmeg, and salt.
  7. Toss the pear slices with the spice mixture and lemon juice until every slice is evenly coated and glistening.
  8. On a floured surface, roll out the first disc to fit the pie plate. Press it firmly into the bottom and sides.
