Ingredients:
- 2 cups fresh or frozen fruit (e.g., strawberries, raspberries, mango, peaches)
- 2 tablespoons lemon juice
- 1-2 tablespoons honey or maple syrup (optional)
- 1/4 cup water (if needed)
Instructions:
- Wash and chop the fruit into smaller pieces. If using frozen fruit, let it thaw slightly.
- Combine the fruit, lemon juice, and honey (if using) in a blender or food processor. Add water sparingly if needed to achieve a smooth puree.
- Taste the puree and adjust sweetness as desired.
- Line a dehydrator tray or baking sheet with parchment paper or a silicone mat.
- Pour the puree onto the prepared surface and spread it evenly into a thin layer (about 1/8 inch or 3mm thick).
- Dehydrate at 135°F (57°C) for 4-8 hours, or bake at the lowest possible oven temperature (ideally around 170°F or 77°C) with the oven door slightly ajar for 3-6 hours, or until leathery and no longer sticky. Check frequently to prevent burning.
- The fruit leather should be pliable but not sticky to the touch.
- Let the fruit leather cool completely on the tray.
- Cut the fruit leather into strips using a knife or pizza cutter. Store in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks.
