Ingredients:

  • 2 cups fresh or frozen fruit (e.g., strawberries, raspberries, mango, peaches)
  • 2 tablespoons lemon juice
  • 1-2 tablespoons honey or maple syrup (optional)
  • 1/4 cup water (if needed)

Instructions:

  1. Wash and chop the fruit into smaller pieces. If using frozen fruit, let it thaw slightly.
  2. Combine the fruit, lemon juice, and honey (if using) in a blender or food processor. Add water sparingly if needed to achieve a smooth puree.
  3. Taste the puree and adjust sweetness as desired.
  4. Line a dehydrator tray or baking sheet with parchment paper or a silicone mat.
  5. Pour the puree onto the prepared surface and spread it evenly into a thin layer (about 1/8 inch or 3mm thick).
  6. Dehydrate at 135°F (57°C) for 4-8 hours, or bake at the lowest possible oven temperature (ideally around 170°F or 77°C) with the oven door slightly ajar for 3-6 hours, or until leathery and no longer sticky. Check frequently to prevent burning.
  7. The fruit leather should be pliable but not sticky to the touch.
  8. Let the fruit leather cool completely on the tray.
  9. Cut the fruit leather into strips using a knife or pizza cutter. Store in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks.
