Ingredients:

  • 12 fresh figs (approx. 1 lb / 450g), halved lengthwise
  • 3 tbsp honey
  • 2 tbsp unsalted butter, melted
  • 1/4 tsp ground cinnamon
  • 1/8 tsp flaky sea salt
  • 1/4 cup walnuts, roughly chopped

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Trim the stems from the figs and slice each fruit in half lengthwise.
  3. Arrange the figs on the sheet, cut side up, leaving a half inch of space between each piece. Note: This ensures the heat circulates and they roast instead of steam.
  4. Combine melted butter, honey, cinnamon, and sea salt in a small bowl. Stir vigorously until smooth.
  5. Drizzle the glaze over the cut side of each fig. Use a spoon to make sure the honey fills the center cavity.
  6. Place the sheet on the center rack and roast for 18–22 minutes. Cook until the figs look slumped and jammy and the glaze edges bubble into a deep mahogany brown.
  7. Remove from the oven and immediately sprinkle with chopped walnuts.
  8. Let them rest for 5 minutes. Note: The glaze thickens as it cools slightly, making it more pourable and rich.
