Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1/2 cup (120ml) whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115g) cream cheese, softened
  • 1/4 cup (30g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups (340g) chocolate candy melts (white or dark)
  • Lollipop sticks (optional)
  • Sprinkles (optional, for decoration)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour your baking pan. In a mixing bowl, cream butter and sugar. Add eggs one at a time, then mix in milk and vanilla. Combine dry ingredients, then gradually incorporate into wet mixture. Pour batter into the prepared pan and bake for 25 minutes, or until a toothpick comes out clean.
  2. In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, mix until fully combined.
  3. Allow cake to cool, then crumble into a bowl. Mix in the frosting until well combined.
  4. Scoop mixture into 1-inch balls and place on a parchment-lined baking sheet. Chill in the fridge for 30 minutes.
  5. Melt chocolate candy melts according to package instructions.
  6. Dip the end of lollipop sticks into the melted chocolate, then insert into cake balls. Dip cake pops fully into chocolate, allowing excess to drip off. Decorate with sprinkles before chocolate hardens.
  7. Refrigerate before serving to set the coating.
