Ingredients:
- 1 lb (450g) Ground Beef (80/20 blend preferred)
- 1/2 lb (225g) Ground Pork
- 1 cup (40g) Panko Breadcrumbs
- 1/4 cup (10g) finely chopped fresh Cilantro
- 1/2 cup (60g) finely diced Onion
- 2 large Eggs, lightly beaten
- 2 cloves Garlic, minced
- 2 Jalapeños, seeded and finely diced
- 1 teaspoon Smoked Paprika
- 1/2 teaspoon Garlic Powder
- 1/4 teaspoon Cayenne Pepper (optional, for extra heat)
- Salt and freshly ground Black Pepper to taste
- 4 oz (115g) Cream Cheese, softened
- 1 cup (100g) Shredded Cheddar Cheese
- 1 Jalapeño, seeded and finely diced
- 1/4 teaspoon Garlic Powder
- 1 tablespoon chopped green onions
- Olive Oil, for greasing
Instructions:
- Prepare the Popper Filling: In a small bowl, combine softened cream cheese, cheddar cheese, diced jalapeño, garlic powder, and green onions. Mix well and set aside.
- Combine Meatball Ingredients: In a large mixing bowl, combine ground beef, ground pork, panko breadcrumbs, cilantro, onion, eggs, garlic, diced jalapeños, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Gently mix with your hands until just combined. Don't overmix.
- Form the Meatballs: Scoop a portion of the meat mixture (about 2 tablespoons). Flatten the meat in your palm and create a small well. Place a small spoonful of the cream cheese filling into the well. Gently bring the edges of the meat around the filling, pinching to seal. Roll into a smooth meatball.
- Chill the Meatballs: Place the formed meatballs on a parchment-lined baking sheet. Cover and refrigerate for at least 30 minutes. This helps them hold their shape during baking.
- Bake the Meatballs: Preheat oven to 400°F (200°C). Lightly grease a baking sheet with olive oil. Place the chilled meatballs on the prepared baking sheet, ensuring they aren't touching. Bake for 20-25 minutes, or until the meatballs are cooked through and the internal temperature reaches 165°F (74°C). The meatballs should be golden brown.
