Ingredients:
- 2 cups (480 ml) whole milk
- 1/4 cup (50 g) granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon rennet or 1 tablespoon lemon juice for vegetarian option
- 1/4 cup (60 ml) heavy cream
- 1 cup (150 g) mixed berries (strawberries, blueberries, or raspberries)
- 1/4 cup (30 g) chopped toasted nuts (almonds or hazelnuts)
- Mint leaves (optional, for garnish)
Instructions:
- In a mixing bowl, whisk together whole milk, granulated sugar, and vanilla extract until sugar is dissolved.
- Stir in rennet (or lemon juice) into the milk mixture and mix gently.
- Pour the mixture into serving cups and cover with plastic wrap.
- Place the cups in the refrigerator for at least 30 minutes until set.
- While the junket sets, wash and prepare the berries and chop the nuts.
- Once set, remove the cups from the fridge, top with berries and nuts, and garnish with mint if desired.
